# Kitse — Getting More Chef Leads (LA)

> **In one minute:** The onboarding page fixes *converting* leads. This doc is about getting *more* of
> them in the door. Four levers, cheapest-first: **(1) referrals** from current chefs, **(2) a public
> Apply page** that actually captures leads, **(3) targeted outreach** to LA home cooks who are already
> selling, and **(4) public permit records** (Cottage Food / MEHKO) that are basically a free list of
> qualified leads. The verified sources and a starter lead list are in the last two sections.

---

## The 4 levers (in priority order)

### Lever 1 — Referrals (cheapest, highest quality) ✅ built
Chefs who already love Kitse are the best recruiters — their friends trust them and tend to be
serious. **Built into the onboarding page**: a "refer a chef, you both get $50 when they make their
first sale" card with a copy-able link, share buttons, and invite-by-email.

- **Why $50-on-first-sale, not on signup:** pays only for *real* sellers, not tire-kickers. Protects CAC.
- **Where to surface it:** onboarding page (done), the "you're live" email, and after a chef's first
  good week (peak goodwill).
- **Goal:** referrals should become the #1 source of new sellers. Track *referred → first sale* rate
separately — it's usually 2–3× higher than cold channels.

### Lever 2 — The public Apply page ✅ built
`apply.html` is the top of the funnel: plain value prop (keep 75% + delivery, no fees, we help with the
permit), a 5-minute form, and an instant "Maya will reach out" confirmation.

- **Make it the destination for every channel below** — every ad, DM, flyer, and market visit points here.
- **Capture the lead even if they're not permit-ready.** The form has a "Not yet — I'll need help
getting one" option on purpose; that chef is our best onboarding-concierge case, not a reject.
- **Next step to make it real:** wire the form to a CRM/sheet + an autoresponder (Formspree, a Google
Form, or a tiny serverless endpoint). Right now it's a front-end demo.

### Lever 3 — Targeted outreach to cooks already selling
LA is full of people **already selling home food** on Instagram, at pop-ups, and in Facebook groups.
They've proven demand and just need a better home. This is warm-ish outreach, not spam.

- Find them (see **Verified channels**), then DM/email a short, specific, human note (scripts below).
- Lead with *their* upside (keep 75%, weekly payouts, we handle permits + delivery), not "join our app."
- One channel owner, a simple tracker, follow up twice, then stop. Respect platform rules + CAN-SPAM.

### Lever 4 — Public permit records (a free qualified list)
California **Cottage Food** operators and LA County **MEHKO** holders are on public records. These
people are *already permitted* — the single hardest onboarding step is behind them. That makes them the
highest-intent cold leads available. (Exact sources + how to pull names in **Verified channels**.)

## Outreach scripts (steal these)

**Instagram DM — to a home baker already posting orders**
> Hi [name] — your [thing they make] looks unreal 😍 I help home chefs in LA sell through Kitse: you
> keep 75% + 100% of delivery, get paid weekly, and we actually help you get the cottage-food permit.
> No fees to join. Want me to send the 2-minute version? — [you], Kitse

**Email — to a permitted cottage-food seller (Lever 4)**
> Subject: You're already permitted — want more local orders?
> Hi [name], congrats on your Cottage Food permit. Kitse puts permitted LA home chefs in front of
> nearby customers — you set your menu and prices, keep 75% + all delivery fees, and get weekly
> payouts. Since you're already permitted, you could be live in days. Worth a quick look? Apply here:
> [apply link]. — [you]

**Farmers-market / pop-up card (in person)**
> "Love your food — you should be on Kitse. Keep 75%, weekly payouts, we help with permits. Apply at
> kitse.co/sell." (QR code → apply page.)

**Rule for all of it:** every message is specific to the person, leads with their money, and links to
the Apply page. No mass-blasting identical DMs — platforms kill that and it makes Kitse look spammy.

---

## How to measure "more leads"

- **Leads by source** (referral / apply-direct / outreach / permit-records) — know what's working.
- **Lead → application → first sale** for each source. Cheap leads that never sell aren't leads.
- **Cost per activated chef** by channel. Double down where it's lowest (usually referrals).
- **Guardrail:** outreach reply/complaint rate. If a channel gets "stop messaging me," it's burning the
brand — fix the targeting or drop it.

## ✅ Verified channels (real sources, with links)

> Researched June 2026. All URLs below are real. Note: the LA County Public Health `.htm` pages use an
> HTTP↔HTTPS redirect that automated fetchers choke on, but they open fine in a normal browser.

### 1. Government records — the highest-intent leads (already permitted)
- **LA County MEHKO public list** (permitted home restaurants): `http://publichealth.lacounty.gov/eh/i-want-to/view-mehko-list.htm`
  · program hub `http://publichealth.lacounty.gov/eh/business/microenterprise-home-kitchen-operation.htm`
  · applicant services `https://opportunity.lacounty.gov/mehko/`
100+ permits since the Nov-2024 launch; the county is subsidizing up to 1,000 permittees through
**June 30, 2026**, so the list is growing fast. These cooks legally *can't* use third-party delivery,
so they self-promote on social — easy to find a contactable handle.
- **LA County Class A Cottage Food roster (downloadable PDF):** `http://www.publichealth.lacounty.gov/eh/docs/business/approved-class-a-cottage-food-operators.pdf`
  · Class A `http://publichealth.lacounty.gov/eh/business/class-a-cottage-food-operators.htm`
  · Class B `http://publichealth.lacounty.gov/eh/business/class-b-cottage-food-operators.htm`
Use the **business-name** column to find the matching public account — don't use home addresses for outreach.
- **CDPH (state background / credibility hook):** Cottage Food `https://www.cdph.ca.gov/Programs/CEH/DFDCS/Pages/FDBPrograms/FoodSafetyProgram/CottageFoodOperations.aspx` · MEHKO `https://www.cdph.ca.gov/Programs/CEH/DFDCS/Pages/FDBPrograms/FoodSafetyProgram/GeneralPermitRequirementsMEHKO.aspx`

### 2. Directories where LA cooks already self-list
- **COOK Connect / COOK Alliance** (legal MEHKO marketplace + map): `https://www.cookconnect.com/map` · `https://www.cookalliance.org/cookconnect`
- **MEHKO Finder** (CA licensed-MEHKO directory, LA section): `https://mehkofinder.com/`
- **Castiron** (home-baker storefront builder, 2,000+ sellers): `https://www.castiron.me/resource/selling-food-from-home-los-angeles` — find LA sellers via `site:shopcastiron.com Los Angeles`
- **Shef** (homemade-food marketplace, LA): `https://shef.com/homemade-food-delivery/los-angeles-ca`

### 3. Instagram / TikTok hashtags (verified active)
`#lahomebaker` · `#homebakerla` · `#losangelesbaker` · `#cottagefoodca` · `#cottagebakery` · `#mehko`
(+ search "MEHKO Los Angeles") · `#latamales` · `#lapopup` · `#lamealprep`.
**Filter for sellers, not hobbyists:** keep only bios with a selling signal — "DM to order," preorder,
order form / link in bio, pickup/delivery, prices, drop schedules, or a "cottage food / MEHKO permitted" mention.

### 4. Facebook groups
- **Los Angeles Bread Bakers:** `https://www.facebook.com/groups/labakers/`
- **SoCal Bakers MeetUp:** `https://www.facebook.com/groups/462327537229636/`
- **Cottage Food Business** (national, CA-heavy): `https://www.facebook.com/groups/CottageFoodBusiness/`
- Many groups ban cold pitching — engage organically or post a vendor-friendly value offer.

### 5. Farmers / pop-up markets that host home & cottage vendors
- **Food Access LA** — *most cottage-food-friendly; accepts Class A vendors, year-round apps:* `https://foodaccessla.org/vendors`
- **Smorgasburg LA** (vendor roster w/ 60+ IG handles; note: requires commercial kitchen, so these are *graduated* pop-ups): `https://la.smorgasburg.com/vendors1`
- **626 Night Market:** `https://626nightmarket.com/lineup` · **Santa Monica FM:** `https://www.santamonica.gov/process-explainers/apply-to-be-a-vendor-at-the-santa-monica-farmers-market` · **VenaVer pop-ups:** `https://venaver.org/vendor-info/`

## ✅ Starter lead list (real, public LA home-food businesses)

> **Honesty note:** 7 verified home/cottage sellers + 1 aggregator account below, plus 3 flagged ones.
> We deliberately returned real, verified leads instead of padding to 20 with guesses. Before any
> outreach: confirm the account is still active and publicly selling, follow IG/FB DM rules, and comply
> with CAN-SPAM / TCPA for email or text.

### Verified — home/cottage-based, publicly selling

### Real handle, but verify one thing first
- **`@lahomebaker`** — real LA home baker but small/thin bio; confirm there's an active order CTA before pitching.
- **`@out.of.ordi`** (Out of Ordi) — started as a K-town home bakery but **opened a storefront in April 2025**, so probably no longer cottage/home. Great "graduated" story, weaker recruit.
- **The Ensaymada Project's Smorgasburg presence** — confirm it isn't now using a commercial kitchen (would change its cottage classification).

### Deliberately excluded (for honesty)
- **`bakery.la_`** — fixed Pico Blvd storefront + café hours → not home-based.
- **`thecottagebakery_`** — verified to be a **UK** bakery.
- **`bluecottagebakeryla`** — points to Louisiana, not Los Angeles.
- **Most Smorgasburg vendor handles** — require a commercial kitchen; use the roster for *warm intros*, not as cottage-food leads.
- **COOK Alliance "MEHKO Stories"** — real named cooks, but the ones checked are **San Diego**, not LA.

### Where to start
The two scalable, on-target channels are the **LA County MEHKO list** and the **Class A cottage food PDF**
(permitted operators by name) plus **Food Access LA** markets. The 7 verified businesses above are a
warm starter batch — they've already proven demand and just need a better home.
