Your permit is the only thing between you and your first order
Canné — this is the step where most chefs stall, so we won’t let you. In California you can sell
under one of two permits, and for cannelés the choice is usually simple:

Cottage Food (likely you): baked goods like cannelés are cottage-food eligible. Lower
cost, faster approval. Best fit for a pastry kitchen. |

MEHKO: needed only if you cook full hot meals to order. Overkill for baked goods. |
We’ll pre-fill your county application, tell you the exact documents to bring, and Maya will
review it before you submit so it’s approved the first time.
